This #3000 whetstone is called "Itadaki" means peak, and designed to make a base of the sharpest edge. It is made of high quality abrasives mixed with special medium so that this stone sharpen knife quickly and meantime it keeps the surface flatness longer. Because this stone can sharpen hard carbon steels, this can be used for Uraoshi for one-sided knife, and be useful to regain sharpness of knife with not much chippings.

This series (Kensho) of whetstone is recommended for someone who cares about details of sharpening, precision of sharpening, and superior sharpness. It is also good for migrating from man-made stone to natural stone.

※ There may be difference is size a bit because of hand made product

※ This is harden by high heat so that there is little difference is hardness

※ This may not change even it's sunk in water long time though, it brakes once it gets frozen

Kensho Itadaki 3000 - Oh my

What a stone, the tactical feedback is awesome, what more is you HEAR the feedback, I love this stone. this is also a big big stone so it's definitely worth its price point. Hiro was a pleasure to communicate with. This 3000 is the the most fun stone in my line up, I'm literally waiting to get to it in the grit progression.

Great touch up stone cuts fast does load up a little but makes a nice edge for maintaining the esge of your knife.

Yes, if there are not chippings on the knife edge, starting #3000 is good as well instead of starting #1000. And, it makes a good foundation for the next step finer stones!
