Kensho Ishizue Whetstone #1000

$110.00

As the name "Kensho-Ishizue" (Foundation Stone) means, the Kensho-Ishizue is designed to create the foundation for the best possible sharpening.

This whetstone is made by firing high-temperature with high-quality abrasives and special adhesive, and by increasing the void space within the stone so that it has become a whetstone between the previous "Itadaki" and "Zan" models.

It is a well-balanced whetstone with few quirks, and is suitable for tasks such as reducing the thickness of a blade, flattening a rounded blade, and reducing the size of a secondary bevel, Koba.

#1000 is ideal for shaping Japanese knives, such as raising the cutting edge, Kireha.

For tasks that enhance sharpness, we recommend Akatsuki.

This series (Kensho) of whetstone is recommended for someone who cares about details of sharpening, precision of sharpening, and superior sharpness. It is also good for migrating from man-made stone to natural stone. Kensho is an artificial whetstone created through a collaboration between our sharpener and a natural whetstone manufacturer, after more than a year of trial and error, incorporating whetstone research and feedback from the field.
It's focused on considering the role that each grit of whetstone should play and ensuring that it performs that role appropriately. Furthermore, the Kensho series is designed to use the whetstones in order from coarser to finer will produce the best sharpness.
