This santoku knife is hammer forged 3 layer style with a soft-carbon steel cladding. What is unique about the knife is that the steel went through tempering twice. The purpose of the first tempering is low temperature quenching and slow tempering, which release the stress of the steel and bringing the steel good hardness. The second tempering is like annealing. The reason of doing it is balancing the steel. It is aiming to bring the long lasting edge and steel's toughness. 

It's made with a good balance, and recommended for home use. Santoku means “three advantages”. This type of knife is great for preparing vegetables, fish, and meat.
